Job Description


Executive Chef

Position Summary:

Responsible for overseeing the day-to-day culinary operations of the Hotel. The Executive Chef will also supervise the training and development of the kitchen staff to ensure the highest quality of food service for Hotel guests. Technical responsibilities include recipe standardization, plate presentation, labor and food cost control, and inventory control. Maintains a well-organized kitchen in a clean and safe manner. Executive chefs provide leadership in establishing high-quality standards in all kitchen operations and ensure the kitchen is compliant with the regulatory requirements for food handling, sanitation and safety

Responsibilities:

  • Direct and oversee all culinary operations, to include, but not limited to, production of all hotel meals, food quality and presentation, compliance with all safety and sanitation standards and regulations, team member productivity and performance, implementation of policies and procedures, cost controls and overall profitability
  • Leads and coordinates activities of cooks engaged in food preparation. Ensures employees understand expectations and parameters. Maintains the productivity level of employees. Encourages and builds mutual trust, respect, and cooperation among team members. Serves as a role model to demonstrate appropriate behaviors. Provides guidance, feedback, and individual coaching when needed. Participates in the employee performance management process.
  • Estimates daily production needs on a weekly basis and communicates production needs to kitchen personnel daily. Maintains food costs and labor percentiles.
  • Create and implement new menus and individual menu items for outlets and banquet catering events based on current food trends and regional tastes in partnership with Senior Leadership of the company.
  • Interact with guests and clients to monitor and assess satisfaction trends, evaluate and address issues and make improvements accordingly
  • Ensure compliance with federal, state, local and company health, safety, sanitation and alcohol awareness standards
  • Perform general management duties including, but not limited to, systems management, budget and forecasting, report generation, department management and meeting participation and facilitation
  • Monitor and develop team member performance to include, but not limited to, providing supervision and professional development, scheduling, conducting counseling and evaluations and delivering recognition and reward
  • The recruitment, interviewing, training and performance management of team members
  • Member of the hotel Executive Committee.
  • Other duties as assigned.

Requirements:

  • Five years related work experience and/or training in a high-volume restaurant/hotel required.
  • Three year?s supervisory experience required.
  • Associate's degree or Technical School Certification
  • Formal training in Safety and sanitation required
  • Must have a comprehensive knowledge of all hotel departments and functions.
  • Must have a comprehensive knowledge of applicable Federal, state, and local health, safety, and legal regulations.
  • Must have exceptional mathematical and computer skills.
  • Ability to timely obtain any required licenses or certificates.
  • CPR training required; first aid training preferred.
  • Associate's degree (A.A.) or equivalent from two-year College or technical school
  • Two years related experience and/or training in a high-volume restaurant

Don't Be Fooled

The fraudster will send a check to the victim who has accepted a job. The check can be for multiple reasons such as signing bonus, supplies, etc. The victim will be instructed to deposit the check and use the money for any of these reasons and then instructed to send the remaining funds to the fraudster. The check will bounce and the victim is left responsible.
